Short ribs are tailor made for slow cooking. Hard working muscles that break down to being soft as butter, decadently coupled with rich aged fat which melts between the muscle fibres as the beef becomes more tender than you could ever imagine.

Our Beef is sourced from small, regenerative British farms and hung to dry age for a minimum of 28 days.
